Cel przedmiotu

To learn about biologically active compounds present in food, including their chemical structure, functions, types, and mechanisms of biological activity, as well as the range of raw materials and products containing these compounds, including enriched and functional products.

Wymagania wstępne

Knowledge of chemistry, biochemistry, general food technology, human nutrition, and marketing at the engineering study level.

Zakres tematyczny

Lectures:

  • Definitions of bioactive compounds in food, nutraceuticals, designed, enriched, and functional foods.
  • Bioactive compounds: nutritional and non-nutritional, naturally occurring in raw materials or processed products.
  • Bioactive food components (structure, properties, mechanism of bioactivity, occurrence, stability during storage and processing): vitamins, minerals, bioactive amino acids, peptides, proteins, saccharides, and their derivatives.
  • Bioactive food components (structure, properties, mechanism of bioactivity, occurrence, stability during storage and processing): polyphenols, polyols, probiotics, prebiotics, synbiotics, dietary fiber, hydrocolloids, polyunsaturated fatty acids, phytosterols, and phospholipids.
  • Effects of bioactive compounds: anticancer, cardiovascular, and anti-inflammatory actions.
  • Isolation and utilization of bioactive substances in the creation of designed foods.
  • Summary and final assessment of the course.

Laboratory (block classes of 4 academic hours each):

  • Determination of antioxidant potential in selected food products.
  • Isolation and separation of plant polyphenols using chromatographic methods.
  • Determination of probiotic potential in selected food products.

Summary and final assessment of laboratory sessions.

Warunki zaliczenia

  • Lecture: Passing requires attendance at lectures and achieving a positive grade on the final test (minimum 60% of points).
  • Laboratory Exercises: Passing requires attendance, active participation in tasks, and completion of laboratory reports.

The final grade for the course is the arithmetic mean of the grades from laboratory exercises and the final test from the lecture portion.
